SippingFineWine is always excited in trying new wines and especially the rare opportunity to taste an inaugural vintage of a superb wine, and sharing such insights with wine aficionados. Yan Cellars is a small exquisite boutique winery crafting wines from esteemed vineyard sites in Napa Valley. Their 2017 Cabernet Sauvignon was produced from the Fern Rock vineyard owned by the Castellucci Family, who have reputation of sourcing some of the finest grapes in Napa. Yan is owned by Eugene Bayani, and Patrick Saboe is the winemaker. Together they produced 600 bottles of their first vintage; 2017 Yan Spring Mountain Cabernet Sauvignon.
The Spring Mountain District in Napa is about a 10-minute drive from St. Helena. The Fern Rock Vineyard, located on the western side of the Mayacamas Mountains, is a spectacular site with vines planted in 1993. The vineyard is located in a cool climate with slopes ranging between 600 to 2600 feet above sea level and has soils comprising of volcanic and sedimentary rock. This unique terroir produces complex, powerful, yet graceful Cabernet’s, that can only come from cooler high elevation vineyards.

2017 Yan Spring Mountain Cabernet Sauvignon
Deep Ruby with developing aromas of ripe red and black berry fruits, and notes of oak, cacao and vanilla spice with slight touches of floral, aged for 26 months in 100% new French oak. On the palate layered flavors of blackberry, black cherry and fig with some black pepper, cinnamon and slight chalkiness. Very fine soft tannins, good structure, balanced well with acidity, long finish, ready to Sip now, ending with a great mouthfeel and sweet spicy fruit character. I opened the bottle and tasted it over a 3-hour window. The wine displayed its beauty, depth and delicacy about an hour after opening and continued to develop until the last Wonderful Sip!
